I don't think you can change your DC in the middle of a sim. It seems impossible; everybody would change their line-up all the time because of matchups! Shaq will be out the entire sim.
Correct me if I'm wrong!

Nope, you can't change your DC in the middle of the sim.

Just list Shaq as the starting center.  When he's not there the computer will automatically go with the 2nd guy on your DC.
